Jamaican Me Happy Granita

A grown up, boozy snow cone? Yes, please!
Serves 4 people
3 C. fresh watermelon
1 bottle Seagrams Jamaican Me Happy
½ cup simple syrup
generous pinch of salt
½ of a lemon, juiced
½ cup vodka (adjustable based on preference)
Watermelon cubes for garnish
Puree watermelon in a blender.
Combine with Seagram’s Escapes Jamaican Me Happy, vodka, simple syrup, lemon juice, and salt.
Pour into a 9x13 glass or metal baking dish.
Freeze for 8 hours.
Scrape the mixture using a fork.
Spoon mixture into glasses and garnish with watermelon cubes..
