Lemonade Colada Ice Pops

Featuring Calypso Colada

Keep a batch of these in the freezer for the perfect treat on hot summer weekends!


Prep Time: 5 minutes • Total Time: 7 hours 20 minutes • Serves: 7


Ingredients

  • 1 (11-oz.) bottle , room temperature

  • 5 tbsp. cream of coconut

  • 7 (5-oz.) paper cups

  • 1 (11-oz.) bottle , room temperature

  • 7 popsicle sticks

  • Lemon rounds, for garnish

Directions

  • In a small bowl whisk together Calypso Colada and cream of coconut. Pour into paper cups filling halfway. Freeze for 1 hour.

  • Once blue layer is mostly frozen, add Jamaican Me Happy, filling up to just below the top. Insert popsicle stick, and slide lemon rounds down over the stick.

  • Freeze for at least 6 hours, preferably overnight.

  • When ready to serve, cut open Dixie cup with scissors and peel them away from the pops.
